Rkatsiteli and Dimyat (indigenous Bulgarian variety) from Thracian Valley, Bulgaria.  All organically grown, fermented with ambient yeast in neutral tanks. Fresh and bright on the palate with crisp apple/pear character and refreshing citrus-y acidity.
